How to prepare
Preheat the oven at 220 °C and prebake the pizzas in 3 minutes.
Spread the ricotta over the pizza bases and put the grilled eggplant on top.
Put the pizzas in the oven for about 8 minutes until the crust is a bit brown. Meanwhile cut the fresh mint in pieces.
Spread the pomegranate seeds over the pizzas and top it off with mint. Buon appetito!
